Spicy Peanut Noodles with Teriyaki Cilantro Lime Salmon

  • 1 box (284 g) Can’t Mess It Up!™ Teriyaki Cilantro Lime Wild Pink Salmon
  • 2 pkg (85 g each) instant ramen noodles
  • 2 tbsp (30 mL) smooth peanut butter
  • 2 tbsp (30 mL) rice wine vinegar
  • 2 tsp (10 mL) soy sauce
  • 2 tsp (10 mL) minced fresh ginger
  • 1 red Thai finger chili pepper, seeded and finely sliced
  • 2 cups (500 mL) coleslaw mix
  • 1/2 red pepper, thinly sliced
  • 2 green onions, finely sliced
  • 2 tbsp (30 mL) chopped peanuts


  • Cook salmon according to package directions. Reserve sauce from pouch; set aside.
  • Meanwhile, cook ramen noodles according to package directions; drain.
  • Toss together hot noodles, peanut butter, vinegar, soy sauce, ginger and chili pepper until noodles are well coated. Stir in coleslaw mix, red pepper and green onions.
  • Divide noodle mixture between 2 bowls. Top with salmon and drizzle with reserved sauce from pouch. Sprinkle with peanuts.

Goof-Proof Tips

  • Substitute cashews or almonds for peanuts.
  • Turn down the spice. Substitute a jalapeno pepper or a pinch of dried red chili flakes for the Thai finger chili pepper.
