Maple Dijon Salmon with Mashed Sweet Potatoes and Kale

Serves: 4 people  | Prep time: 15 mins  | Cook time: 15 mins


  • 2 boxes (284 g each) Can’t Mess It Up!™ Maple Dijon Wild Pink Salmon
  • 2 lb (1 kg) sweet potatoes, peeled and chopped
  • 1/2 lb (250 g) Yukon Gold potatoes, peeled and chopped
  • 2 cloves garlic, halved
  • 2 tbsp (30 mL) butter, melted
  • 2 tsp (10 mL) Cajun seasoning
  • 1/4 tsp (1 mL) each salt and pepper
  • 2 cups (500 mL) baby kale


  • In saucepan of boiling salted water, cook sweet potatoes, potatoes and garlic for 10 to 12 minutes or until tender; drain well and return to saucepan. Stir in butter, Cajun seasoning, salt and pepper.
  • Mash until smooth and stir in kale. Cover and let stand for 2 to 3 minutes or until kale is wilted.
  • Meanwhile, cook salmon according to package directions.
  • Serve salmon with sweet potato mixture. Spoon sauce from salmon over top.

Goof-Proof Tips

  • Adding a small amount of potatoes to the sweet potatoes makes them a little fluffier.
  • Substitute Creole or Tex-Mex seasoning for Cajun seasoning, if desired.
