Honey Balsamic Salmon and Potato Salad

Serves: 4 people  | Prep time: 15 mins  | Cook time: 20 mins

INGREDIENTS

  • 2 boxes (284 g each) Can’t Mess It Up!™
  • 2 lb (1 kg) mini potatoes, halved (1 to 1 1/2 inches/2.5 to 4 cm in diameter)
  • 1/2 lb (250 g) green beans, trimmed
  • 1/3 cup (75 mL) mayonnaise
  • 2 tbsp (30 mL) grainy mustard
  • 1/4 tsp (1 mL) each salt and pepper
  • 1/2 cup (125 mL) finely sliced red onion
  • 1 tbsp (15 mL) finely chopped fresh dill
  • Lemon wedges

PREPARATION

  • Cook salmon according to package directions. Flake salmon into large pieces. Reserve sauce from pouch; set aside.
  • Meanwhile, in large pot of salted water, bring potatoes to boil; cook for 12 to 15 minutes or until tender, adding green beans in the last 2 minutes of cooking time. Drain.
  • Toss together potatoes, green beans, mayonnaise, mustard, salt and pepper. Stir in salmon and reserved sauce, red onion slices and dill.
  • Divide among 4 bowls. Serve with lemon wedges.

Goof-Proof Tips

  • Substitute parsley or chives for dill, if desired.
