TERIYAKI CILANTRO LIME SALMON POWER BOWLS

1 box (284 g) Can’t Mess It Up™ Teriyaki Cilantro Lime Wild Pink Salmon
1 pouch (250 g) ready-to-serve quinoa and brown rice mix
2 cups (500 mL) small broccoli florets, blanched
½ ripe avocado, peeled, pitted and sliced
1 cup (250 mL) shredded red cabbage
1 tbsp (15 mL) toasted sesame seeds
Cook salmon according to package directions.
Meanwhile, heat quinoa and rice mix according to package directions.
Divide quinoa and rice mix between 2 bowls.
Top with broccoli, avocado, cabbage and salmon.
Drizzle with sauce.
Sprinkle with sesame seeds.
- Drizzle with sriracha hot sauce for a spicy addition.
- Substitute matchstick carrots or thinly sliced red pepper for shredded cabbage, if desired.
- To blanch broccoli florets, cook in pot of boiling, salted water for about 2 mins or until tender.
Drain and immerse in ice water; drain again.
