MAPLE DIJON SALMON WITH MASHED SWEET POTATOES AND KALE

2 boxes (284 g each) Can’t Mess It Up!TM Maple Dijon Wild Pink Salmon
2 lb (1 kg) sweet potatoes, peeled and chopped
1/2 lb (250 g) Yukon Gold potatoes, peeled and chopped
2 cloves garlic, halved
2 tbsp (30 mL) butter, melted
2 tsp (10 mL) Cajun seasoning
1/4 tsp (1 mL) each salt and pepper
2 cups (500 mL) baby kale
In saucepan of boiling salted water, cook sweet potatoes, potatoes and garlic for 10 to 12 minutes or until tender; drain well and return to saucepan. Stir in butter, Cajun seasoning, salt and pepper.
Mash until smooth and stir in kale. Cover and let stand for 2 to 3 minutes or until kale is wilted.
Meanwhile, cook salmon according to package directions.
Serve salmon with sweet potato mixture. Spoon sauce from salmon over top.
- Adding a small amount of potatoes to the sweet potatoes makes them a little fluffier.
- Substitute Creole or Tex-Mex seasoning for Cajun seasoning, if desired.
