Maple Dijon Salmon with Charred Cauliflower

Cook time: 40 mins
Cook salmon according to package directions.
Preheat oven to 425˚F. Toss together cauliflower, oil, garlic, salt, pepper and chili flakes; arrange on parchment paper–lined baking sheet. Bake for 35 to 40 minutes or until cauliflower is lightly charred and tender.
Divide cauliflower among plates. Top with salmon and sauce. Garnish with parsley and capers.

6 cups (1.5 L) small cauliflower florets
3 tbsp (45 mL) canola oil
2 cloves garlic, minced
1/4 tsp (1 mL) each salt and pepper
Pinch red chili flakes
2 tbsp (30 mL) finely chopped fresh parsley
2 tbsp (30 mL) capers
- Substitute cilantro or basil for parsley, if desired
- Substitute broccoli for cauliflower, if desired
